Halo Hash

Serves: 4-6
Ingredients
- 3 cups brown rice
- 2 cups pinto beans, cooked (or any bean)
- 1 cup salsa
- 2 ounces low-fat cheese
- 1 tablespoon olive oil
Directions
- Saute and partly mash beans in hot oil. Add rice, cook until desired doneness, adding salsa and seasonings such as cumin, jalapenos, hot sauce, etc, to taste. A dollop of sour cream improves this tremendously, but be warned, it will cause your halo to tilt precariously! ;-).
