Halibut and Bean Stew

  1. In a large pot over medium high heat saute the bacon and shallots until bacon is crisp (5-10 minutes).
  2. Stir in olive oil and garlic and cook stirring another minute or so.
  3. Stir in tomatoes, wine and saffron and bring to a boil. Reduce heat and simmer for 5 minutes.
  4. Stir in beans and fish and bring stew to a simmer. Cover; and simmer until fish is done (5 minutes).
  5. Season with salt and pepper.
