Half Stuffed Baked Potato

Yields: 3 potatoes
Ingredients
- 3 large baked potatoes
- salt and pepper
- 3 tablespoons romano cheese, ground
- 2 tablespoons heaping green onions, chopped
- 4 ounces butter
- white pepper, to taste
- 3 tablespoons bacon, chopped and fried
- 3 tablespoons heaping sour cream
Directions
- Spoon out the meat of the potatoes and mix well with the above ingredients, saving some Romano for topping. Put mixture back into potato shells. Stick 1 pat of butter in either end of the potato. Sprinkle with romano and paprika. Heat through in 400* oven for 1 hour. May be prepared the day before needed, covered with plastic wrap, and refrigerated. Pop in oven when ready to use.
