Gumbo

Ingredients
- 1 large onion, chopped
- 1 stalk celery, chopped
- 6 large crabs
- 1 lb large shrimp
- 1 (1 lb) package hot link sausage
- 2 cups cooked okra
- water, to cover
- 3 tablespoons flour
- 2 tablespoons shortening
- 2 cups long grain rice
- salt and pepper
Directions
- In a large pot, mix 3 Tblsp. flour with 2 Tblsp. shortening. Brown until golden. Add onion, celery, okra and water; let cook for 1 hour. Add all other ingredients and let cook for another hour. Add salt and pepper to taste and let cook for another 15 minutes. Turn heat off. In a separate pot, cook 2 cups of long grain rice to serve with gumbo.
