Gullah Sweet Potato Pone

From the low country and Gullah in South Carolina.

Ingredients

• 2  large sweet potatoes
• 2  eggs, beaten
• 1⁄2 cup sugar
• 1  teaspoon nutmeg
• 2  tablespoons margarine, melted
• 1⁄2 teaspoon salt
• 1  cup  dark cane sugar

Directions

1. Peel and grate sweet potatoes.
2. Add other ingredients and mix thoroughly.
3. Pour into greased baking dish and cook in slow oven at 300 degrees F until done, about 1 hour.
