Guinness and Stilton Pate

Ingredients
- 2 ounces butter
- 1 shallot, finely chopped
- 1 garlic clove, minced fine
- 2 ounces Guinness stout
- 1⁄2 lemon, zest of
- 4 ounces Stilton cheese, crumbled
- 1 bunch fresh parsley, finely chopped
- salt, to taste
- fresh ground black pepper
Directions
- Melt the butter in a saucepan and gently sweat the shallot and garlic until soft.
- Remove from heat and allow to cool.
- When cool, add the Guinness and stir gently for 3 minutes.
- Add the remaining ingredients and stir well. Transfer to a blender and process until.
