Guacamole

Serves: 6-8
Ingredients
- 3 medium avocados
- 1⁄4 cup finely chopped red onion
- 1⁄2 jalapeno pepper, minced (more or less to taste)
- 1⁄4 cup cilantro leaf, and upper stems chopped
- 1 pinch salt, to taste
- 1 lime, juice of
- 1⁄2 teaspoon cumin
- 1⁄2 teaspoon cayenne pepper
- 1 garlic clove, minced
- 1 roma tomato, chopped
Directions
- Scoop avocado pulp in a large mixing bowl with lime and toss to coat. Drain and reserve lime juice.
- Add salt, cumin and cayenne to bowl with avocados and mash.
- Fold in the onions, jalapenos, tomatoes, cilantro and garlic.
- Add 1 tablespoon of reserved lime juice.
- Let sit at room temperature for 1 hour then serve.
