Ground Chicken Meatballs

This recipe came from Busy Cooks, I found it on about.com and wanted to share it with my RecipeZaar family. I hope you enjoy it as much as we did. I was looking for a healthy alternative for meatballs, a word of caution-make sure you are getting ground chicken breast as opposed to ground chicken, there is a HUGE difference. Show more

Yields: 8-10 meatballs (depending on how large you make them :)

Directions

  1. Preheat oven to 350 degrees F.
  2. Melt butter in saucepan, add onion and garlic.
  3. Cook onion and garlic over medium heat until tender-about 5 to 7 minutes.
  4. Remove from heat, place in medium bowl. Add bread crumbs, egg, milk, salt, pepper, and tarragon. Mix well.
  5. Add chicken, mix gently with hands to combine all ingredients.
  6. Form into 1" meatballs, place on cookie sheet (I found it helpful to use parchment paper). You also may want to wet your hands or moisten them with olive oil, the chicken is sticky.
  7. Bake for 15-20 minutes or until cooked through (internal temperature should be 165 degrees F).
