Ground Beef Pie

Serves: 6-8
Ingredients
- 1 lb lean ground beef
- 1 medium onion, diced
- 2 medium tomatoes, diced
- 1 (6 ounce) can tomato paste
- 3 garlic cloves (smashed)
- 1 dash salt
- 1 dash pepper
- 1⁄4 cup olive oil
- 1⁄2 cup raisins
- 3 cups cooked rice
Directions
- Prepare the rice using 1/2 cup more of water. When ready set aside.
- In a fryer pan mix oil, onion, garlic, salt and pepper in a medium heat until the onion is tender.
- Add tomatoes and tomato paste and keep in medium heat for about 7 minutes.
- At this point add the groundbeef and fry it well. If the mix is too dry add some water and let it boil.
- Add the raisins and cook for 3 more minutes.
- Use a 9 x 9 inch pan to make the pie spraying oil before to press the first layer of rice.
- Spread the groundbeef mixture over the rice and cover with another layer of rice pressing firmly.
- For garnish spread grated boiled egg and parsley (optional).
