Grilleed Steak With Blue Cheese Butter

Yields: 4 Steaks

Ingredients

  • 14 cup blue cheese, crumbled (2oz)
  • 14 cup unsalted butter, softened
  • 1  tablespoon  chopped fresh parsley
  • 4 (12 ounce)  New York strip steaks, 1 1/2-inch thick (about 12 oz. each)

Directions

  1. Preheat grill to high.
  2. Combine: blue cheese, butter and parsley in a bowl with a fork. DO NOT overmash. The cheese should remain chunky. Set aside until ready to serve.
  3. Pat steaks dry with paper towels, then season both sides with salt and pepper.
  4. Grill steaks, covered, on both sides to desited doneness (about 5 minute per side for med-rare).
  5. Remove from grill, tent with foil, and allow to rest 5 minute Serve with dollop of blue cheese butter.
