Grilled Squid with Red Wine Sauce

  1. Whisk together ¼ cup of oil, 2 tblsps cilantro and half of garlic in a small bowl.
  2. Using kitchen shears, cut squid bodies down one long side; open flat.
  3. Using sharp knife, lightly score squid.
  4. Arrange in large, shallow baking dish in single layer.
  5. Pour garlic mixture over.
  6. Let marinate atleast 3 hours or overnight.
  7. Prepare grill (medium-high heat).
  8. Heat ¼ cup oil in heavy, large skillet over medium heat.
  9. Add vegetables, remaining garlic and tentacles.
  10. Simmer until vegetables are tender, about 15 minutes.
  11. Season.
  12. Add 2 tblsps cilantro.
  13. Grill marinated squid just until opaque, about 45 seconds per side.
  14. Divide sauce among plates.
  15. Top with squid.
