Grilled Salmon with Charred Tomato Salsa

  1. Preheat broiler.
  2. Place first 4 ingredients on a broiler pan and broil 10 minutes or until tomatoes are tender and onion is slightly blackened.
  3. Cool 5 minutes.
  4. Core tomatoes, discard cores.
  5. Coarsely chop tomatoes, peppers, chiles, and onion; place in a bowl.
  6. Add cilantro, oil, salt, and black pepper; toss gently.
  7. Prepare grill.
  8. Place salmon, skin side down, on a grill rack.
  9. Grill 10 minutes or until fish flakes easily when tested with a fork.
  10. Top with about 2 Tbs.
  11. salsa; garnish with thyme, if desired.
  12. Yields 6 servings.
