Grilled Potatoes With Butter and Garlic Glaze

Buttery with a touch of garlic and sugar, these grilled potatoes are delicious.

  1. Preheat grill to medium-high heat.
  2. Spray grill rack with nonstick nonflammable cooking spray.
  3. Using a fork, pierce each potato 8-10 times.
  4. Rub 1 T butter evenly on each potato.
  5. Wrap potatoes in heavy-duty aluminum foil.
  6. Grill, covered with a grill lid, for 40-45 minutes, or until potatoes are cooked through.
  7. Remove potatoes from grill.
  8. Cut potatoes lengthwise into quarters.
  9. Grill potato quarters for 2-3 minutes per side, or until lightly golden.
  10. In a grill-safe saucepan, melt remaining 4 T butter.
  11. Add parsley, salt, pepper, sugar and garlic, stirring well to combine.
  12. Brush butter mixture on grilled potatoes.
  13. Garnish with green onion, if desired.
  14. Serve immediately.
