Grilled Pork Tenderloin With Savory Slaw

This is a great recipe made on the BBQ and is impressive to boot.

Ingredients

  • 2  lbs  pork tenderloin
  • 2  tablespoons garlic oil or 2  tablespoons  vegetable oil
  • 12 cup barbecue sauce
  • Slaw

  • 4  cups  coleslaw mix (with carrots)
  • 1  medium onion (sweet onion like Vidalia, Walla Walla or Texas Sweet)
  • 1  red pepper, thinly sliced
  • 12 cup  ranch dressing
  • 2  tablespoons cilantro, chopped fine
  • 2  teaspoons lime juice

Directions

  1. To cook the pork- prepare the grill with med hot fir. Brush pork with oil. Grill 8 min per side or until thermometer inserted in the thickest part reads 150 degrees. Brush pork generously with bbq sauce and cook about 1 min more per side. Remove from grill, cover with foil and let stand 5 min before slicing. Discard sauce.
  2. To make slaw – In a large bowl, combine coleslaw mix, onion and bell pepper. In a small bowl, combine ranch dressing, cilantro and lime juice; toss veggie mix until just coated. Refrigerate until ready to use. To serve place slaw in center of platter and surround with sliced tenderloin.
