Grilled Pepper and Soya Cheese Sandwich

This one is a very rough recipe, that is I saw it on "You Are What You Eat" on BBC America, but I didn't get to catch the recipe in full, but I believe this is the gist of it that I've posted here. I wanted to save this because I seem to have so much trouble searching for some recipes on BBC America's Website. If you try this, please let me know how it turns out. I hope to try it asap myself. :) This looks like a great recipe for me; healthy and fine for my IBS, too. ETA: Came back to make some corrections on the recipe; trying to remember what I saw on the show when I saw a rerun that had this recipe in it. Thanks and sorry for any confusion. I am hoping I got it closer to correct but I haven't found it yet on the BBC's website/You Are What You Eat. FYI: Soya cheese is the same as soy cheese. Show more

Serves: 1

Yields: 1 bell pepper sandwich

Ingredients

  • 1  bell pepper (can probably use yellow, green, orange, or red. I think Gillian used a yellow on the show)
  • 1 -3  slice  soya cheese, torn into pieces (or several chunks or cubes of soya cheese)
  • 1  slice tomatoes
  •  carrot, and cucumber for edible garnish

Directions

  1. Slice a bell pepper lengthwise to create a pocket, and remove seeds.
  2. Place torn slices or chunks or cubes of soya (soy) cheese in one of the halves.
  3. Top with a slice of tomato.
  4. Grill for 10 mins and serve with carrots and cucumber for garnish.
  5. Note: I hope I got the gist of this recipe as close to correct as possible. If you find or know more about this recipe from Gillian McKeith and You Are What You Eat, I would appreciate more info/correctiojns, etc.
