Grilled Mussels W/ Chipotle Aoili

Yields: 12 mussels
Ingredients
- 12 green lip mussels
- 3⁄4 cup mayonnaise
- 6 -8 garlic cloves, minced fine (or to taste)
- 1 -2 medium chipotle pepper, minced fine (or to taste)
- 1 tablespoon sriracha hot chili sauce (Rooster sauce)
- 1 teaspoon soy sauce, in each mussel
- smelt, roe (Masago)
Directions
- Rinse mussels and remove beards.
- Steam Mussels till they open slightly then remove. Do not cook completely. They will finish cooking on the grill.
- Remove top of mussel shell. Leave mussel in bottom shell.
- Mix mayo,garlic,peppers and Rooster sauce completly. Blend if you want till smooth.
- Add a tablespoon of soy sauce to mussel in shell and a dolop of the Aoli on top.
- Have grill on medium low heat and grill for 3 to 5 minute Soy sauce should be cooked away and carmelized,
- Top with a little masago for garnish.
- Serve!
