Grilled Ham and Egg Salad Monte Cristos

Ingredients
- 6 hard-boiled eggs, chopped
- 1 cup diced cooked ham
- 1⁄2 cup finely chopped celery
- 1 tablespoon minced onion
- 1⁄2 cup mayonnaise
- 2 teaspoons prepared mustard
- 1 teaspoon prepared horseradish (or more)
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 12 slices whole wheat bread or 12 slices white bread
- cooking oil
BATTER
- 1⁄2 cup cornmeal
- 1⁄2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 cups milk
- 2 eggs, lightly beaten
Directions
- Combine hard-cooked eggs, ham, celery, onion, mayonnaise, mustard, horseradish, salt and pepper; spread on six slices of bread. Top with remaining bread and set aside.
- In a bowl, whisk batter ingredients until well blended. Heat about 1/2 inches of oil in a large deep skillet. Dip sandwiches into batter.
- Fry in hot oil for 3 minutes on each side or until golden brown. Drain on paper towels.
