Grilled Beef Filets Marinated in Lemon and Black Pepper

  1. Wash the beef and dry well.
  2. Place olive oil, lemon juice, and a generous amount of fresh coarsely ground black pepper on a plate that is large enough to contain the beef medallions side by side.
  3. Turn the beef over several times in the marinade to coat the meat on both sides.
  4. Cover and marinate in the refrigerator for 2 hours, turning frequently.
  5. Return the meat to room temperature.
  6. Heat a charcoal or gas grill; drain the marinade and grill the medallions over med-high heat until deep brown grill marks form on the exterior of the meat and the center is rosy pink.
  7. Remove the meat from the grill and salt both sides.
  8. Let rest a few minutes; serve garnished with lemon wedges.
