Grilled Apricot Blues

Ingredients
- 8 slices sourdough bread
- 2 tablespoons butter, softened
- 1⁄4 apricot preserves or 1⁄4 jam
- 1 cup spinach leaves
- 3⁄4 cup dried apricot
- 4 ounces crumbled blue cheese
Directions
- Brush one side of each bread slice with butter. Spread apricot preserves on 4 of the slices.
- Top with spinach, dried apricots and blue cheese. Cover with remaining 4 slices of bread.
- Grill 3-4 minutes until golden brown and cheese is melted.
