Grilled Acorn Squash With Tofu

Ingredients
- 4 medium acorn squash
- 1⁄2 cup light firm tofu
- 1 egg
- 2 egg whites
- 3 tablespoons light brown sugar
- 2 teaspoons margarine
- 1⁄2 teaspoon ground cinnamon
- 1⁄4 teaspoon ground allspice
- 1⁄8 teaspoon ground nutmeg
- salt and pepper
Directions
- Pierce each squash in several places with a sharp knife. Grill over medium hot coals, turning frequently, until squash is tender, 35-40 minutes. Let stand until cool enough to handle.
- Cut squash into halves; scoop out and discard seeds.
- Scoop out flesh and mash in a large bowl; add tofu, egg, egg whites, brown sugar, margarine and spices, mixing until smooth. Season to taste with salt and pepper.
- Spoon mixture into greased 1 quart baking dish. Bake, uncovered, at 350 until mixture is set and toothpick inserted near the center comes out clean, about 30 minutes. Let stand 5 minutes before serving.
