Grill Roasted Leg of Lamb

Got some ideas & threw this together...DELICIOUS!!!

Serves: 4-8

Directions

  1. Using indirect method, preheat the grill.
  2. Make 6 deep cuts into the lamb.
  3. Place a whole garlic clove into 4 of the cuts.
  4. Place a sprig of fresh mint into 2 of the cuts.
  5. Cut lime into quarters -- squeeze 2 of them onto the lamb & rub into the meat.
  6. Season to taste with the LAWRY's.
  7. If the leg is netted, thread the 3 sprigs of rosemary through 3 places on top or fasten down with skewers or toothpicks.
  8. Squeeze the remaining lime quarters juice on.
  9. Place uncovered in heavy duty aluminum roasting pan.
  10. Insert meat thermometer.
  11. Place on grill & close the cover.
  12. Roast until internal temp reaches 175° to 180° -- about 2 to 3 hours.
  13. Remove from grill & loosely cover with foil & let set for 15-20 minutes before carving.
