Griddled Sweet Potatoes

Ingredients
- 3 tablespoons olive oil
- 1 teaspoon chili powder
- 4 tablespoons coriander or 4 tablespoons parsley, chopped
- 1 kg sweet potato, scrubbed and thickly sliced
Directions
- Put the oil, herbs and chilli powder in a ziploc bag big enough for the sweet potatoes. Add the sweet potatoes and seal. Toss the bag around to coat them in the flavoured oil.
- Cook for about 20 minutes on the barbecue or under a hot grill or in a hot oven until soft when tested with a knife.
