Green Tomatillo Salsa

This is really good on tacos and carnitas.

Ready In: 45 mins

Yields: 3 cups or so

Ingredients

  • 1 14 lbs  tomatillos
  • 13 cup  chopped cilantro (, or more)
  • 12-1  small  jalapenos or 12-1  small  serrano pepper, seeded and minced
  • 34 cup chicken broth
  • 13 cup lime juice
  •  salt

Directions

  1. Husk tomatillos and place on a baking pan.
  2. Roast them, uncovered in a 400* oven until spotted brown.
  3. This should take around 40 minutes.
  4. Remove and cool.
  5. On a food processor whirl the tomatillos, cilantro and jalapeno until smooth.
  6. Pulse in broth and lime juice.
  7. Taste and salt to preference.
  8. Serve at room temp.
  9. You can cook this down if you like it a bit thicker.
