Green Rice

Ingredients
- 2 (4 ounce) cans green chili peppers
- 2 cups chicken broth
- 1 cup chopped fresh parsley
- 1 medium onion, chopped
- 1⁄2 teaspoon chopped garlic
- 2 tablespoons olive oil
- 1 cup brown rice
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon black pepper
- 1 tablespoon butter
Directions
- Puree 1/4 cup broth, peppers, parsley, onion and garlic in food processor.
- Lightly brown rice in butter. Add puree and cook 5 minutes.
- Add remaining ingredients, cover and cook 1 hour on low.
