Green Pea Soup With Smoked Ham

Serves: 4-6

Ingredients

  • 1  tablespoon butter
  • 1  large onion, chopped
  • 2 (14 ounce) cans chicken broth
  • 1 (14 ounce) package  frozen mashed potatoes
  • 2  cups  frozen peas
  • 1  teaspoon dried tarragon
  • 1 12 cups milk or 1 12 cups  light cream
  • 14 teaspoon pepper
  • 6  ounces smoked ham, finely diced

Directions

  1. In large saucepan, melt butter. Add onion and cook until softened. Add chicken broth, potatoes, peas, tarragon and 1 ½ cups water.
  2. Bring to a boil, reduce heat, cover, and cook until potatoes are smooth and dissolved, about 8 minutes.
  3. Pulse soup in food processor or blender.
  4. Return puree to saucepan. Stir in milk and season with pepper. Ladle into bowls and top with ham.
