Green Dumplings

Ingredients
- 1 cup ricotta cheese
- 1 cup cooked broccoli or 1 cup spinach, chopped fine
- salt, pepper, parsley to taste
- 1 small egg, beaten
- 1⁄2 cup flour
- vegetable broth
Directions
- In a medium-sized mixing bowl, combine all the ingredients.
- Roll the dough into 1" balls and roll them in flour on a flat surface.
- Cook gently in boiling water or vegetable broth for about 8-10 minutes.
- Serve with butter and grated cheese.
