Green Chile Stew

This is a recipe that was posted in the newspaper where I live. We actually serve it at the local brew pub that I work at. It is very good! Show more

Yields: 2 quarts

Ingredients

  • 1  lb  stew meat
  • 1  large onion, small diced
  • 12 cup  minced garlic
  • 2  bell peppers, small diced
  • 2  jalapenos, minced
  • 2  cups green chilies, roasted, seeded and small diced
  • 2  quarts  beef stock

Directions

  1. Sauté onions, bell peppers, jalapenos, green chiles and garlic until onions are translucent. Then add the stew meat and slightly brown. Add beef stock and simmer for 30 minutes. Adjust seasonings. Salt and pepper to taste and serve.
