Green Chile Stew

Ingredients
- 1 tablespoon oil
- 2 lbs pork, cubed
- 2 large potatoes, peeled and cubed
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 2 cups fresh roasted chopped green chilies or 1 lb chopped canned green chili peppers or 1 lb frozen green chili pepper
- 1 tablespoon cumin
- 1 teaspoon oregano
- salt and pepper
- 2 cans beer
Directions
- Brown the pork, onion, and garlic in the oil.
- Add the beers and the seasonings, and simmer on low 2 hours.
- Add potatoes and simmer 1/2 hour.
- Add chiles and simmer one hour longer.
- If necessary, add another beer.
- Add more salt and pepper to taste.
- When properly cooked, this is HOT.
- (Or, after the first step put all ingredients in crockpot on low and come back 8-10 hours later).
