Green Chile and Potato Pie

  1. Wash and boil potatoes until nearly done - should be firm. When cool, cut into 1/4 inch slices.
  2. Preheat oven to 375 deg F.
  3. In medium skillet, saute onion and garlic in oil until soft. Remove from heat and add the chiles and roasted peppers.
  4. In a large bowl, beat the eggs. Stir in the onion-peppers mix, cheeses, crushed red pepper, salt and pepper.
  5. Layer half the sliced potatoes in a greased 10" deep-dish pie plate. Spoon over half the egg mixture. Repeat.
  6. Bake 30-35 minutes or until golden brown and center is set.
