Green Chicken Enchiladas

Ingredients
- 6 cups cooked chicken, shredded (buy a rotisserie chicken at the supermarket)
- 1 (4 ounce) can green chilies
- 1 onion, chopped
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
- 2 teaspoons granulated garlic
- 1⁄2 teaspoon Mexican oregano
- 1⁄2 teaspoon ground cumin
- 18 white corn tortillas
- 1 (28 ounce) can green enchilada sauce
- 2 cups monterey jack pepper cheese, shredded
Directions
- De-bone chicken and stir together with green chilies, chopped onion, salt, pepper, granulatd garlic, Mexican Oregano and ground cumin. This will create the chicken mixture.
- Using a 13x9 pan, layer 6 corn torillas, 1/3 chicken mixture 1/3 pepper jack cheese and 1/3 can green enchilada sauce. Repeat with two more layers. Bake covered at 350 degrees for 30 minutes.
- Serve hot.
