“Green Butter” (Garlic-Herb Butter)

Yields: 1 1/2 Cups
Ingredients
- 1 head garlic
- 1 cup butter, softened
- 1⁄2 cup flat leaf parsley, chopped
- 1⁄4 cup fresh tarragon, chopped
- 1⁄4 cup shallot, minced
- 1 tablespoon lemon zest
- 1⁄2 teaspoon kosher salt
- 1⁄4 teaspoon black pepper
Directions
- Wrap head of garlic in foil. Bake at 375 for 45 minutes.
- Squeeze the soft garlic from the head into a blender or processor.
- Add remaining ingredients. Purée until smooth.
- This recipe freezes beautifully. Sometimes I double or triple the recipe and freeze it for future use.
