Green Beans With Panch Phoran and Almonds

Panch phoran is an Indian (Bengali) spice/seed mix. Purcahse it in an Indian spice shop or use Panch Phoran. Use freshest green beans you can find. Great served with Dal or curries. Show more

Ingredients

  • 1  lb green beans, trimmed and cut into 1 1/2 inch pieces
  • 14 teaspoon salt
  • 1  tablespoon  vegetable oil
  • 1 14 teaspoons  panch phoron (Panch Phoran)
  • 14 medium onion, peeled and sliced
  • 3  garlic cloves, peeled and minced
  • 14 teaspoon cayenne
  • 12 teaspoon turmeric
  • 12 lemon, juice of
  • 14 teaspoon black pepper
  •  salt, to taste
  • 3  tablespoons  slivered almonds, toasted and chopped

Directions

  1. Fill large pot with enough water to cover the beans and bring to a boil. Add beans and 1/4 tsp salt; boil 3 minutes. Drain and set aside.
  2. In a large skillet, heat oil over medium heat. Add the panch phoran; stir until it begins to pop, about 30 seconds.
  3. Add the onion and saute until it begins to brown, about 4 minutes. Add the garlic and cook another 2 minutes. Add the cayenne and turmeric and stir.
  4. Add drained green beans and lemon juice, stir and cook until beans are heated through, about 2 minutes. Stir in black pepper and salt to taste.
  5. Put into serving bowl and garnish with toasted almonds.
