Green Beans With Caramelized Red Onions

A simple side dish from Bon Appetit. I usually cut back on both the oil and the amount of onions, and use fresh tarragon when I can. Show more

  1. Heat 3 tablespoons oil in heavy large skillet over medium-high heat.
  2. Add onions; sauté until deep brown, about 35 minutes.
  3. Season with salt and pepper.
  4. Cook beans in medium pot of boiling salted water until just crisp-tender, about 4 minutes.
  5. Drain; rinse under cold water until cool, then pat dry.
  6. Whisk remaining 3 tablespoons oil in vinegar and tarragon in large bowl to blend.
  7. Add beans and onions and toss to coat.
  8. Season with salt and pepper.
  9. Serve warm or at room temperature.
