Green Beans & Potatoes Dijon

Ingredients
- 12 ounces red potatoes
- 12 ounces green beans
- 3 tablespoons olive oil
- 1⁄2 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1 tablespoon Dijon mustard
- 1 garlic clove
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- 2 tablespoons parsley
Directions
- Quarter potatoes and boil with skins for 4 minutes. Halve fresh green beans and boil 4 minutes. Drain. Mince garlic and mix with rest of ingredients and add to potatoes and green beans. Serve warm.
