Green Bean Salad With Mexican Oregano-Ensalada De Ejotes

Ingredients
- 1 lb fresh green beans, washed and trimmed
- 1 teaspoon salt
- 2 quarts water
- 1⁄3 cup extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 teaspoon dried Mexican oregano
- 1⁄2 medium red onion, diced finely
- salt and pepper
Directions
- Was,trim,and cut green beans into 2 inch segments.Peel and chop onion,set onion aside.
- Bring water and 1 teaspoon of salt to a boil.Add beans and simmer 8 minutes.Immediately drain and rinse with cold water to stop the cooking process,.
- Whisk together oil,vinegar,oregano,and salt and pepper to taste.Mix with beans and onion,toss well,Serve or chill for 1 hour before serving.
