Greek Rub for Grilled Meat

Especially good with lamb. From the Barbecue Bible. Posted for ZWT6.

• Yields: 1 cup, enough for 6-8 pounds of meat

Ingredients

• 1⁄3 cup coarse salt
• 1⁄3 cup  cracked black peppercorns
• 1⁄3 cup  coarsely crumbled Greek oregano
• 2  tablespoons dried dill
• 2  tablespoons  extra-virgin olive oil

Directions

1. Combine all ingredients and stir to mix.
2. The spices should be coated with oil but they should not stick together.
3. This will keep for up to 6 months if stored in an airtight jar away from light or heat.
