Ingredients
- 2 cups chicken stock
- 1⁄2 teaspoon salt
- 2 garlic cloves, minced
- 2 teaspoons olive oil
- 1 cup white rice
- 3 green onions
- 1 cup tomatoes
- 1⁄4 cup black olives
- 3 ounces feta
- 1⁄2 teaspoon oregano
- 1⁄2 teaspoon rosemary
- 1⁄4 teaspoon thyme
Directions
- In a medium saucepan, bring the chicken stock, salt, garlic and oil to a boil. Add long-grain white rice; return to a boil.
- Reduce heat, cover and simmer until rice is tender and liquid is absorbed, about 20 minutes. Remove from heat.
- Stir in remaining ingredients. Serve hot.
