Greek Pasta Salad

Ingredients
- 1 (12 ounce) box gluten-free penne
- 2 small zucchini, sliced thin
- 1 pint grape tomatoes, cut in half
- 1⁄2 cup black kalamata olive, cut in half
- 1 (7 ounce) package of tomato basil feta, crumbled
- 1⁄2 cup chopped parsley or 1⁄2 cup basil
For dressing
- 1⁄3 cup red wine vinegar
- 1⁄2 cup grapeseed oil (or olive)
- 1⁄4 cup fresh lemon juice
- 1 1⁄2 teaspoons herbes de provence (or oregano)
Directions
- Cook pasta according to package directions and let cool.
- Put pasta in a large bowl and add all other ingredients.
- For dressing:
- Place all dressing ingredients in a jar and shake.
- Pour over pasta salad and toss gently. Adjust to taste with salt and pepper.
