Greek Ouzo Chicken

Ingredients
- 1 lb skinless chicken breast
- 1 1⁄3 cups carrots, coarsely grated
- 1 1⁄3 cups zucchini, coarsely grated
- 1⁄2 cup heavy cream or 1⁄2 cup half-and-half
- 2 tablespoons olive oil
- 3 tablespoons ouzo
- sea salt
- fresh ground pepper
Directions
- Heat the oil in a heavy-bottomed frying pan. When hot, add the chicken and sauté for 4 minutes. Add the carrots and zucchini and continue to sauté 3 minutes longer. Add the ouzo, cream, salt, and pepper and cook 2-3 minutes more until the sauce melds.
