Greek Orzo Salad

Serves: 4-6
Ingredients
- 1 cup orzo pasta
- 1 cup crumbled feta cheese
- 1⁄2 european seedless cucumber, thinly sliced
- 1⁄2 yellow bell pepper, chopped
- 10 cherry tomatoes, halved
- 3⁄4 cup kalamata olive, halved and pitted
- 1⁄2 cup olive oil vinaigrette dressing
- 1⁄2 cup chopped scallion
Directions
- In a large saucepan of boiling salted water, cook orzo until tender but still firm, about 8 minutes. Drain well and rinse with cold water. Drain.
- In a medium bowl, combine orzo with the remaining ingredients. Toss gently to combine.
