Greek Mushrooms

Ingredients
- 2 lbs medium mushrooms
- 1 cup water
- 1 cup red wine vinegar
- 1 cup olive oil
- 2 bay leaves
- 1⁄4 teaspoon crushed thyme
- 1⁄2 teaspoon onion powder
- 2 garlic cloves
- 2 teaspoons salt
- 12 peppercorns
Directions
- Clean and trim mushrooms.
- Bring all ingredients (except mushrooms) to a boil and simmer 5 minutes.
- Add mushrooms and simmer 10 minutes.
- Cool. May be served at room temperature or reheated.
- Best if made a day ahead.
