Greek Chicken With Cherry Tomatoes and Feta

Ingredients
- 2 cups cherry tomatoes, halved
- 1⁄2 cup of fresh mint, thinly sliced
- 1⁄2 cup crumbled feta cheese
- 1⁄3 cup kalamata olive, roughly chopped
- 3 teaspoons olive oil
- 1⁄2 teaspoon sea salt
- 1⁄2 teaspoon pepper
- 4 boneless skinless chicken breasts
Directions
- In medium bowl, combine tomatoes, mint, feta, olives, 1 teaspoon oil, half the salt and half the pepper. Let stand until ready to serve.
- Sprinkle chicken with remaining salt and pepper. In large skillet, add remaining oil.
- Add chicken and cook, turning once, for 5-6 minute per side or until no longer pink. Serve with tomato mixture.
