Greek Chicken Pasta Salad

Yields: 8 cups
Ingredients
- 2 -3 boneless skinless chicken breasts
- 2 tablespoons all purpose Greek seasoning (i use Cavender's)
- 1 lemon, juiced
- 1⁄4 cup olive oil
- 1 lb spaghetti noodles
- 1⁄4 cup mayonnaise
- 2 tablespoons all purpose Greek seasoning
- 1⁄2 lemon, juiced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh dill, chopped
- 1 standard package of crumbled feta cheese
- 1⁄4 cup kalamata olive, pitted (to taste)
- 1 small cucumber, peeled, seeded and chopped
Directions
- Trim chicken breasts of any excess fat or grisel and slice breasts into strips. Pour 2 T greek seasoning, juice of 1 lemon and olive oil into a zipper top bag and add chicken. Marinate at least 2 hours or overnight.
- Drain marinade from chicken breasts.
- Add 1 tablespoon of oil to saute pan and saute chicken until done - slightly browned.
- Allow chicken to cool and chop into bite size chunks.
- Boil pasta in salted water for 8-10 minutes and drain. Run cold water over it to stop the cooking and prevent sticking.
- Mix mayo, greek seasoning, parsley, dill and lemon to make the dressing.
- Chop olives to bite size pieces and add to dressing - toss.
- Add cucumber to mixture and toss.
- Add Feta and toss gently. You will want to try and keep the feta pieces whole.
- Pour dressing mixture over pasta and toss thoroughly.
- Add chopped chicken and toss. Chill for at least one hour and enjoy! :).
