Ingredients
- 1 broiler-fryer chicken
- 1⁄2 cup olive oil
- 3 tablespoons lemon juice
- salt
- 1⁄4 lb margarine
- 2 cups canned tomatoes
- 1 teaspoon pepper
- 1 tablespoon dried oregano
Directions
- Rub chicken with olive oil and lemon juice. sprinkle with salt. place chicken in 9x13 pan and bake for 45 minutesat 350 f.
- Cook tomatoes, margarine,pepper, oregano and 1teaspoon salt for 5 minutes.pour over chicken. reduce oven temp to 325 and bake another 45 minutes until tender. baste often.
