Greek Beef Stew

Ingredients
- 2 lbs stew meat
- 2 -3 tablespoons oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (6 ounce) can tomato paste
- 1⁄2 cup red wine
- 1 1⁄2 cups water
- 1 cup sliced carrot
- 1 lb rotini pasta
- 1 lb Velveeta cheese, cubed
- 2 tablespoons butter
Directions
- Saute meat in oil with the onions and garlic.
- Add the tomato paste, wine and water.
- Simmer at least one hour.
- Add the carrots and simmer until carrots are tender.
- About 1/2 hour.
- Meanwhile, cook rotini acording to package directions.
- Drain.
- Fold in cheese cubes and butter and stir until cheese is melted.
- Serve the stew over a mound of pasta.
