Greek Basil Dressing

Ingredients
- 1 garlic clove, minced
- 1 shallot, cut in thirds
- 6 Greek olives, pitted
- 1 teaspoon Dijon mustard
- 1 tablespoon balsamic vinegar
- 1⁄4 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 small tomatoes, quartered
- 3 tablespoons chopped fresh basil
- 1⁄4 teaspoon black pepper
- 1⁄4 cup olive oil
- salt
Directions
- In a blender or food processor, blend all the ingredients except olive oil and salt.
- Add oil in a steady stream, blending until thoroughly combined. Season with salt to taste.
