Ingredients
- 2 medium potatoes, peeled and cubed
- 2 tablespoons lemon juice
- 5 1⁄2 teaspoons olive oil
- 1 garlic clove, minced
- 1 1⁄2 teaspoons fresh oregano, minced
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
Directions
- In a bowl, combine all of the ingredients.
- Transfer to a greased 1-qt. baking dish.
- Bake, uncovered, at 425 degrees for 45-50 minutes or until tender, stirring twice.
