Great Nana's Zucchini Appetizers

From my daughter's great grandmother.. She used to work in a school cafeteria, and this was a big hit with the teachers. These are a great brunch snack. Show more

  1. Beat eggs, then add onion, oil, oregano, cheese, salt, garlic powder.
  2. Using a wooden spoon, fold in the Bisquick and the zucchini slices.
  3. Pour into a 9x13" greased baking dish and bake at 350 F for about 30-35 minutes (until puffed and top is lightly browned).
  4. These will be very low in the pan when baked.
  5. Cut into squares and serve.
