Great Apple Brunch Cake

Serves: 10-12
Ingredients
- 2 cups sugar
- 1 1⁄2 cups salad oil
- 2 well beaten eggs
- 2 teaspoons vanilla
- 3 cups flour
- 1 1⁄2 teaspoons baking soda
- 1 teaspoon salt
- 3 cups chopped apples
- 1 cup chopped pecans
- 1 cup raisins
Glaze
- 1⁄2 cup brown sugar
- 2 tablespoons soft butter
- 2 tablespoons heavy cream
- 1⁄2 cup coconut
Directions
- Combine sugar and oil.
- Beat in eggs and vanilla.
- Fold in flour, baking soda and salt.
- Add apples, nuts and raisins.
- Pour into greased 9x13 pan.
- Bake at 325 for 1 and 1/2 hours.
- Toothpick in center comes out clean.
- Cool 20 minutes.
- Remove from pan; when slightly cooled, glaze.
- Combine all [glaze ingredients] and spread over warm apple cake.
