Gratin of Haddock With Cheddar and Mustard

Simple but but seems fancy, use fresh fish and a good quality cheddar.

Ready In: 30 mins

Serves: 6

Ingredients

  • 36  ounces  haddock (6 6oz pcs , if you can't get haddock sub Corvina, or Scrod , cod is ok too)
  •  salt & freshly ground black pepper, to taste
  • 8  ounces  aged irish cheddar cheese, grated
  • 1  tablespoon Dijon mustard
  • 4  tablespoons  cream

Directions

  1. Pre-heat the oven to 180°C, 350°F, Gas 4.
  2. First season the haddock pieces with the salt and freshly ground black pepper. Arrange the fillets in a single layer in the ovenproof dish (nice enough to bring to the table).
  3. Mix the grated Cheddar cheese together with the Dijon mustard and the cream and spread carefully over the fish.
  4. Bake in the pre-heated oven for about 20 minutes or until the fish is cooked and the top is golden and bubbly. If the fish is cooked but the top is not yet golden, place under the broiler for just a few moments to color the cheese.
